Besides their applications in beer and wine, hydrolysable tannins - or gallotannins - are also used in soft drinks or juices to modify taste. Our tannins are used to mask undesired taste components of artificial sweeteners. . Indeed a number of these products are known to develop undesired after taste - e.g. bitterness - besides their sweetener effect. As a consequence the taste of a low calorie "light" soft drink can differ significantly from the original version. By using the OmniChem tannins in combination with artificial sweeteners a taste profile is obtained that more closely resembles the taste obtained when normal sugars or syrups are used to sweeten the beverage(6). Dosage levels are typical in between 5- 10 % of the amount of artificial sweetener.
